Queso Dip

This is my favorite queso dip. You can make it and serve immediately or put it in a slow cooker on low for a party. The spicy sausage gives the queso a great flavor. You can use diced tomatoes or salsa in this recipe. If you like a thicker queso, use the tomatoes. Otherwise, use the salsa. Another option is to add a bit of salsa after you add the tomatoes to thin it out a bit.

1lb Bob Evans Spicy Sausage
1 16oz package of Velveeta, cut up
1 10oz can of diced tomatoes with chilies, undrained
or
16 oz jar of salsa

Cook the sausage in a pan on medium and drain on a paper towel. Return sausage to the pan and add cheese and tomatoes. Cook and stir frequently until cheese is melted. Serve immediately. If you are taking this to a party, you can cook the sausage ahead of time, then add the cheese and tomatoes and microwave before serving. Serve with scoops or tortilla chips.

Jalapeno Popper Dip

If you like jalapeno poppers, you will love this dip!

2 packages of cream cheese, softened
1 cup of mayo
1 4oz can of chopped green chilies, drained
1 jalapeno, seeded and chopped
1 cup of Parmesan cheese

In a bowl, mix cream cheese and mayo. Add peppers and pour into an 8x8 in dish. Top with Parmesan cheese. You can either bake at 350 for 20-25 min or microwave for 5-7 min and then finish in the broiler for a few minutes to brown the cheese. Serve with toasted baguette or crackers.

Texas Caviar

1 can of black beans
1 can of corn
1 can of petite diced tomatoes
1 Tbsp of minced garlic
1 small red onion chopped
1 green pepper chopped
2 jalapeno peppers seeded and chopped
1 8oz bottle of zesty italian dressing
1 bunch of cilantro chopped
Pinch of salt and pepper

Drain and rinse black beans and corn and add to a large bowl. Drain tomatoes and add to bowl. Add the remaining ingredients and chill for 2 hours. Add cilantro before serving. If you are taking this to a bbq, here's an easy to way to keep the cilantro fresh-place the cilantro in between 2 damp paper towels and then place in a plastic bag. Now your cilantro is all ready to go! I love serving this dip with Scoops.
